I've been vowing to never to spend any FIVE dollar bills that crosses my path.  If I keep accumulating those FIVE's, I will eventually see a wad of a nest egg grow before my eyes.

Start saving those FIVE's and at the end you may want to give yourself a BIG HIGH FIVE!

Great Waffles

                                                 Week 7 ( Save $7)

There are waffles and there are Great Waffles! My definition of a great waffle is light sweet yet buttery, crispy cake of batter baked on waffle iron and it has be able to hold the buttery maple syrupy goodness!

Helpful tips: Whipped egg whites are the secret ingredients to giving waffles the air pockets to create that fluffiness and giving that crisp exterior with the extra sugar. Makes sure you whip the egg whites until soft-peak, then gently fold the whites into the dry batter.

Preheat your waffle iron according to manufacturer’s instructions.   Getting the iron nice and hot means the batter will crisp up as soon as it hits the surface. Don’t forget to spray the iron with vegetable spray.

Did you know that, Store bought pancake mixes actually have a duo purpose recipe on the boxes. It claims to make both pancakes and waffles. Pffff* Note : Pancake batters are designed to make flat pancakes not airy crispy waffles! If you want waffles, it's best to mix up super easy batch or two in no time!

Here is a Great waffle recipe for you to make just in time for Galentine's Day or any day!

 
Ingredients:

1+3/4 cups of all purpose flour

4 teaspoon baking powder

6 Tablespoon granulated sugar

¼ teaspoon salt

1.5 cup milk or buttermilk

2 large eggs @ room temperature, whites and yolks separated

½ cup butter, melted

1 teaspoon vanilla extract


1. Preheat waffle iron.

2. In a large bowl, mix flour, sugar, baking powder salt , stir to combine the dry ingredients.

3. Place the egg whites into a mixing bowl, whisk until stiff and peak forms.

4. In another bowl, whisk and combine milk, egg yolks, melted butter and vanilla.  Slowly stir into dry ingredient. Once combined, fold in egg whites until just combined.

5. Scoop ½ cup of batter and pace into centre of the hot waffle iron.  Close the lid and cook until golden brown and crisp (about 2.5 - 3  minutes, depending on your waffle iron).

Serve waffle topped with butter, syrup or fresh fruit.

** Recipe freeze well...under cook the waffles until lightly brown and freeze. Toast up thawed waffles until heated through and golden brown.

February 13th, It's Galentine's Day!

Oh February, the most romantic month of the year...so much pressure for singles and couples everywhere when February 14th approaches.  We all may not have a "Valentine" but ladies, our gal pals are the true love of our lives!

Girlfriends, mark February 13th on your calendar's, it's unofficially known as "Galentine's Day!" Galentine’s Day is Valentine’s day with your best girlfriends who are your soul mates and deserve an official holiday in honour to themselves for they are your lady love!

Where did the Galentine's Day originate from?
 
If you are not a Park's and Recreation fan, Leslie Knope (played by Amy Pohler), created unofficial fictional holiday on February 13th. Since the episode aired in 2010, it's become just as big a deal as its Valentine's Day counterpart. " Ovaries before brovaries, you know?"

 
Leslie Knope's explains:
 
"Oh it's only the best day of the year. Every February 13th, my lady friends and I leave our husbands and our boyfriends at home, and we just come and kick it, breakfast-style. Ladies celebrating ladies. It's like Lilith Fair, minus the angst. Plus frittatas."
 
 
How to celebrate Galentine's Day ?
 
1. You must eat waffles or frittatas! Make sure you and your best friends at some point in the day eat large amounts of breakfast food.  Leslie Knope did love her brunches!
 
2. Gifts are a must! Ambitious Leslie gifted each of her besties with a hand crocheted flower pens, a mosaic portrait and a 5000 word essay she personally wrote for every person explaining why she loved them so much...talk about setting the bar!
Try to do something inspiring like Leslie.  Whether it be a poetry reading or just a sharpie pen wrapped in a bow. Like who doesn't love sharpies?
 
3. Unfamiliar with the Park's and Recreation sitcom or Galentine's episode?  Why not have a Park's and Rec marathon in honour of our founder, Leslie.
 
How ever you plan to celebrate this occasion with your besties or alone.  Make sure you treat yo'self and don't miss out, it be what Leslie Knope would wanted!
