High Prices at the Gas Tanks

With the high fuel gas prices, what are you doing to get value for your dollar? Are you just buying the gas because you have no choice or are you crossing the border?

Go to  http://www.torontogasprices.com/ and look for cheaper gas in your neighbourhood.

Sometimes, just driving out city core there are bigger savings.  Buying gas at the end of the day, sometimes I find there is a difference of 4 plus cents per litre.

DIY: Tin can picker

This year the pear tree in the backyard has over grown and there must be hundreds of pear that is out of our reach for the picking. The fruit has been joyfully enjoyed by the birds, insects, squirrels and the raccoon.

The fruit is so far up in the tree that a ladder does no justice.
What if I could DIY a simple picking device to enjoy the yield of fruits. This is what I came up with and it totally works!


All you need is a wooden broom handle, an empty tin soup can and a long wood screw with a metal washer.

Note: I punched a hole on the flat side of the wooden broom handle for easier fastening.
 Place the tin can on top of the wooden broom handle and fasten the screw with the washer tightly.
Draw and cut 1 triangle with metal cutters on the can.
(I drew a too many triangles thinking I would need to cut them but really 1 cut works fine!)
Now your can picker is ready to use.  Reach for your fruit and push the fruit into the can. Using the sharp cut triangle, twist the stem of the fruit on an angle to cut the stem.

TADA!! Now lower your can picker and remove your fruit.  ( Be careful with the sharp cut triangle.  Try not to cut yourself! )

Keep on picking! Before you know it, there is enough fruit for sharing!


Tape up the sharp edge of the can when not in use.  Now you have a tin can picker for years to come.

There are so many reasons why you should pick up a book to read.  Not only are books rich in information and knowledge but also good for your health.

Reading books with a variety of subjects can increase our depths about subjects you would have known. Not only will it increasing your reading skills and vocabulary, make your more empathetic, relaxes you, a great hobby, it may help fight Alzheimer's disease.!

Reading puts your brain to work and studies have shown that activities such as chess, puzzles, reading could be two and half times less likely to develop Alzheimer's disease that those spent with less stimulating activities.

Reading is contagious so pick up an old fashion book and start reaping the benefits!

Fruity frozen treats

It's so hard to believe that we are already half way through the calendar year. Time sure flies! Keep on following the blog and keep saving!

Right now all we are concern about is how to stay cool and beat the heat especially with this hot weather upon us.

My favorite cool off treat has to be popsicles. It has always been my choice as a child and still is today. Give me a orange freezie or popsicle anytime!

Here is a quick recipe with only a few ingredients to make your own frozen treats at home anytime straight from your fridge.

If you do not own a frozen treat mould, use paper cups and popsicle sticks.  These items can be found at your local dollar store.

This mould holds about 2 cups of liquid. I puree 1 cup of fruit and measured 1 cup of liquid (combination of juice and peach Smirnoff) into a large measuring cup.






Stir the mixture until combined. Pour into the moulds and set your popsicle toppers on top.

Place the moulds to set in your freezer for at least 5 hours or overnight.

 
 
 
 


Unmould and enjoy your treat!

Pointless packaging

WHY?
Why is everything packaged in plastic ... especially our fruits and vegetables?

It's a pointless packaging! It's suppose to increase the shelf life but the plastic wraps either end up in the landfills or find its way to the ocean and slowly killing marine life.

WHY?
There must be a better option whether it be reusable or biodegradable packaging. But until corporations and retails go that route, we as consumers must do our part by making decisions not to buy produce that are plastic wrap.  Buying loose produce when possible, shopping at farmer's markets and with a little more food planning and less food waste... you will do your part by helping the environment.

Macaron Madness

Pronounced Mac-rons. Not Macaroons.  Roll the R off your tongue and the N is silent.

Macaron's: these little dainty colorful Parisian confectionary delights...Where did these little sandwich cookies originate from? It's unclear but it was the Italians who introduced a French pastry chef in early 1530's,  a plain single cookie made with ground almond, egg white and sugar . The macaron gained it's fame in late 1700 by two asylum nuns who were baking and selling these simple cookies in order to support themselves during the French Revolution.

The macaron was made famous by Pierre Desfontaines in 1900's (owner of Ladurée café).  He took the two cookies and filled them with ganache.  Today café Ladurée continues to be hot spot for macaron craze of Paris even after all these years!

Macarons are everywhere and they look simple enough... How hard could it be to make these gluten- free almond meringue sandwiched filled biscuits? I decided I would make a batch for an upcoming birthday and 3 weeks should give me more than enough time to perfect them.

There are so many recipes, videos, do's and don't, information overload. Apparently,  macarons are very finicky...what does that mean? It means a hundred things can go wrong and it either works or it does not work. It may take up to 12 attempts before one can finally make the "perfect macaron".

What is the "perfect macaron" ? It's defined as a smooth crispy cookie shell with chewy centre and feet at the bottom of the cookie.  Oh! and lets not forget about the silky center filling.

After 10 days, 30 eggs, 30 cups of confectionary sugar, 30 cups of almond flour, 2.5 cups of granulated sugar and 30 hours later... I finally made the perfect batch of macarons! What an expensive and time consuming experience! I define this time in my life as "Macaron Madness!"

With 4 simple ingredients, this is what I learnt in the process and YOU can make them in ONE attempt. Don't get upset or disappointed if they fail. Give it another go in the near future . Here are my tips and tricks through trial and error :

Read through the recipe a few times and follow the instructions ( I know its a lot of information but once you understand the process, everything will be a breeze! )

  • Make sure all the utensils and bowls are clean and oil free.
  • Use either a glass or metal bowls.  Avoid plastic mixing bowls.
  • Eggs should be at room temperature (at least an hour, no need to "age" the eggs)
  • Sift your ground almond flour and confectionary sugar twice.
  • Use cream of tartar to stabilize the egg whites
  • Use only a gelatin base food coloring form (wilton)
  • Have your parchment template sheets drawn (circle size 1.5 inches)
  • Use heavier baking sheets
  • Optional:  food scale to weigh your ingredients.

Ingredients     yield 20

2 large egg whites at room temperature : do not get any of the yolk into the whites!
1/4 cup granulated sugar (50 grams)
2/3 cup almond flour (75grams): sifted
3/4 cup confectionary sugar (aka: icing sugar) (90 grams): sifted
1/8 tsp of cream of tartar
1/8 tsp vanilla extract

1. Have your baking sheets lined with parchment templates or silicon sheets ready ( you may need 2  trays)

2. In a bowl, sift the almond flour and icing sugar twice and set aside.

3. In a medium clean bowl, beat the egg whites on a low speed until foamy.  Add the cream of tartar and increase the speed to medium.  Slowly add the granulated sugar a few spoons at a time. On high speed continue to beat the egg whites until a hard stiff peak forms. Stop beating at this stage!

4. Add your food coloring gel and vanilla extract.

5. With the combined almond flour and icing sugar mixture, fold into the whipped egg whites a 1/3 at time with your spatula.

**This is the most critical technique in mixing. You need to run the spatula from the batter bottom and up and around the sides in Number 8 folding motion. Turn the mixing bowl 1/4 at a time and repeat the fold 50 times. I suggest counting out loud with every fold. To test if the batter is right consistency and ready for piping: is the batter shiny and the consistency of a cake batter? Can you ribbon the number 8 and it holds on its own for about 10 second without sinking? if not, fold a couple more times and test again.  DO NOT over fold or else you will deflate too many air bubbles and the macarons will be flat, cracked, and tough discs with no feet.

6. Once the batter is ready, Fill your piping bag and many recipes suggest using no. 12  round tip.  Use the largest round tip you have. Dab your parchment paper corners down with a bit of batter to hold down your sheet. Hold your piping bag perpendicular over your parchment paper or silicone sheets and pipe your batter by dropping rather than piping. Hold your piping bag about 1/2 inch from your sheet. Pipe your circle rounds and to finish each macaron, flick your tip upwards and twist upwards with your wrist or in a reverse C. This will cut off your batter and you can start on your next piping.

 7. Once the piping is complete, bang the trays a few times or drop the pan to the counter.  This will remove the air bubbles from the top. Pop any air bubbles with a toothpick.

 8. Let the piped macarons rest for 20 to 30 minutes. On a humid day allow 1 hour.  Once there is a shiny skin formed on the top and not sticking to your finger when you lightly touch them by running your finger.

9. Preheat your oven 325. Make sure the baking rack is in the centre of your oven.

10. Bake one tray at a time for 12 minutes. Remove from the oven and leave the macarons to cool down before removing from the paper or mat. They will easily slide off, if not, you can either cool them in the fridge or freezer for a few seconds. If they still stick, put the tray back into the oven for a few minutes. Note: larger macarons need longer time.

11. Now you are ready to fill your macarons once they are completely cooled (approx. 15 minutes).  Pair up similar sized macarons.  Pipe or fill approximately teaspoon of filling on flat side of the macaron. Twist the pair together until the filling just comes to the edge.


12.  Once the macarons are sandwiched together. In an airtight container, you must age the macarons for a 24 to 72 hours. Jammy fillings will be ready overnight. Buttercreams can take up to a week.
**I usually skip this aging step and start taste testing the macarons.

Filling ideas: be creative and adventurous

lemon or lime curds ( look for this recipe in one of my blogs)

Jelly filling: 1/2 cup butter at room temperature
sifted icing sugar  1 -1.5 cup
3 Tbsp of grape jelly (or your favorite jelly)
1/2 tsp lemon juice.

Mix the butter with the icing sugar. Add the jelly and lemon juice until smooth

Buttercream : 1 cup of icing sugar, 1/4 of butter, 1/4 tsp of vailla, 1/2 to 3/4 Tbsp of water

Cream cheese filling: 13 grams of cream cheese, 1/4 c  blueberry preserve, 1.5 cup of icing sugar, dash of vanilla, dash of salt.

YOU DONE IT! NOW GO TAKE TONS OF PICTURES!! THEY ARE SUCH AN  PHOTOGENTIC SUBJECT!!

The macaron shells will keep crisp in your fridge for months. You can actually freeze your filled macarons!  Defrost them in refrigerator overnight. Note: The shells will be weaker.. but still delicious.

Now go and curve your sugar craving with just a one or two of these perfect delights.

With the inflation rate and with everything going up except for wages.  We may cut back on our expenses in certain areas such as entertainment, clothing for example but one thing I will not cut back is in beauty products: serums, day creams, night creams, facial masks, etc.

Is there a place to buy high end beauty products containing product protectors with SPF, vitamins, antioxidants, etc at a reasonable price?

I started looking at other alternatives stores to see if I can buy the best product and get value for my dollar.  The Walmart stores do carry a whole line of products  (Olay, Garnier, L'Oreal, etc) at a better price point than the local big box drug store...but it's not my cup of tea.

With Winter hanging on, there is no sight of Spring. Even though March 20th marked the first day of Spring...what is up with that Mother Nature??

I remember the Canadian weather, where we actually had and went through the four seasons.  Now with the world climate change, we really have 3 seasons: Summer, Fall and Sprinter.

Sprinter? Sprinter is the new term for Spring and Winter. When the weather is suppose to get warmer and then all of the sudden Winter appears without any reason.  We pretty much jump from Winter to Summer. With that said, SPRINTER GO AWAY!

Zero waste movement

Did you know that all the Bulk Barn's across Canada have a zero waste reusable container program since the beginning of 2017?

I have had the odd flyer given to me with my receipt at the Bulk Barn and was interested to give it a try in the near future and I need to investigate to see how the program works. 

I spoke with one of the managers at Bulk Barn to really get the details. In the flyer, it shows 3 steps : bring your containers, fill your containers, pay for your bulk item. Is it really that simple?

Here is what I found out:
1. You have an option to buy Bulk Barn's jars or lined linen bags or bring your own ( mason jars, canning jars, or jars with latch lid ). All jars will be inspected by the cashier before you start filling for chips, cleanliness. They expect you to either put the jars through the dishwasher or hot soapy wash it and vinegar soak etc. ( check their site for cleaning suggestions)

2. Once the jars have passed inspection, the jars will be weighed.  A tiny sticker of the weight will be stuck on to the jar ( this weight number will be minus later).

3. Go fill your jars with your bulk items and head to the cash to check out.

NO more Plastic!
It may sound like a long process and takes organization and not to mention handling fragile bulky jars but to go "Green" makes a difference. By eliminating plastic and bags, we are making a difference. We need to think and change the way we shop!

I hope many more grocery and food chains follow Canada's Bulk Barn's revolution to eliminate plastic. It is up to us to tell the grocery chains to tell their suppliers to "how we want our goods packaged!".  This can be done because in Europe this is already happening. .. and why can't it happen here in Canada!


Contact your local grocery chains via email, phone, snail mail and let them know about your concerns with too much plastic in our packaging!

Year of the Pig

I am so glad there are two New Years to celebrate and if the first New Year sucks, there is second New Year... just one month later to start over again!
 

The Year of the Pig = Success!   

Predictions for 2019, this year is a great year to make money. Whether it be through investments (or following this blog and saving weekly). Save! Save! Save! Get rid of your personal debts. There will be many rainy days!
Just think before you buy!! Decide before making purchases if it's a want or need situation.

This year invest your time with new friends, families and loved ones. Socialise is key.

Don't forget to upgrade and learn new skills for yourself.  You will find a better balance in your life/work but to achieve that, you must prepare, focus, plan, organize, prioritise, yourself everyday to achieve results for what is to come in the near future.

Be active and eat healthier. Get into physical shape one step at a time. With results, you will find more will power and purpose.

Time is not on your side, don't waste valuable time.

To beeswax or wrap

Is there another natural GREEN alternative for food storage instead of PLASTIC cling wraps ? I want to start by doing my part more by finding something that is reusable, keeps food fresher and ZERO waste.


I have my block of cheese all beeswax up!
Actually there is sustainable fabric bees wax wraps which are slowly finding it's way on store shelves. These organic cotton fabric sheets comes in many sizes and shapes.  They are lightly coated with bees wax and jojoba oil. They are reusable!

Just a simple wash with gentle soap in cool water, air dry and good to wrap again for up to a year! Price tag : 3 for $18 (sizes: small, medium or large)

After looking at different methods of making these wraps on the internet...Why don't I TRY to DIY my own ! Now, the most important thing to source : 100 % beeswax ( the wax must be food safe ! )

I was fortunate that my big chain health food store did carry a few varieties of  beeswax's and it made sense to buy the small bar (and if I am not happy with the wraps, look out for future candle tutorials).  Beeswax is also available at Michaels so I was told *shrugs

My fabric was purchased for a few bucks and it was perfect for this project especially with the food motif ( it was also 100 % cotton).  **Make sure your fabric is washed, dried and pressed before starting.

You will need : measuring tape, scissors, cheese shredder, parchment paper,  safe ironing area , large old towels and an iron.

Let's get started! (I decided to make ONE square wrap 12 x 12" to test without any essential oils )

Figure out what size wraps work best for you: 7x7, 10x10, 13x13.
Cut your fabric size and shape out ( maybe you rather use circular shapes vs. squares ).

On your ironing board or area, place an old large towel with a piece of parchment paper larger than your fabric cut out. Place the fabric on top of the parchment paper ( it does not matter whether the fabric is the right or wrong side) .

With your shredder, either shred the wax on the fabric or in a container and spread the wax generously only on half of the fabric only (Shredder washes easily clean). For my fabric,  I only covered 6 inches with the wax.

Fold the non waxed side of the fabric over the wax covered side.  Place another piece of parchment sheet over the folded fabric.

With your iron set on medium-high, slowly iron the parchment paper slowly to melt the wax through the two layers. You will see the waxy grease spots and keep ironing. Remove the top parchment paper and wave the fabric to air dry.

I am using a small
travel iron
Once the fabric has cooled, touch the fabric to make sure every square inch has been covered by melted wax. If you find some bare spots, sprinkle some more shredded wax and iron again between the 2 parchment papers. You can iron on single sheet and do not have to fold in half for this process, Repeat the process until you think the fabric is evenly coated.

Once the fabric dries, it will be stiff yet pliable.

With the warmth of your hands, you can  press it over a bowl, fold it around a block of cheese, fruit or vegetables. You may need to tie a string around your bowl or wrapped item. You will never get that plastic cling wrap seal which is fine because its works! Never wrap raw meat with the wraps, it's not ideal for all foods!

Apparently, you can recoat the surface of your fabric again when you find the wraps are a little worn and not as pliable...how awesome is that!

Here are my thoughts : I used only about 1/8 " of the beeswax. I can probably make about 12 more wraps with the one block of wax ( I paid $8 ). It's very economical to make.  I will use a larger grater next time for larger coverage... it is a learning process to figure how much wax to spread on the fabric. The beeswax is food safe and the waxy grater did come out clean easily .
Overall, I am quite happy with the final product and I will update you next time regarding wax wrapped items.  I was told sometimes the scent from of the beeswax gets absorbs into the wrapped food item.

Peri- Peri chicken

One of my all time favorite grilled chicken's has to be Nando's. The Peri-peri chicken is so flavorable with so many layers of spices. You get the perfect balance with the spicy heat, the garlic, the tang, (and the other secret spices) that's just mouth watering.

Now if only you can make this oven grilled chicken without leaving your home! Here is my version to the marinade, feel free to experiment with spices . Adjust the heat with more or less sriracha : Start with 1 Tablespoon and adjust your heat the next time, depending on your palate. Adjust your cook time depending on your chicken size.

3- 4 pounds whole chicken      
Add a new twist to your turkey!
salt and pepper to lightly season
 
2 teaspoon of onion powder
4 teaspoon of garlic
2 Tablespoon of smoked paparika
1/2 teaspoon of chili powder
1/4 teaspoon of ginger powder
2 teaspoon salt
1 teaspoon ground pepper
6 Tablespoon of lemon juice (bottled)
2 to 4 Tablespoon olive oil
1 to 4 Tablespoon of sriracha

  • Mix all the ingredients in a bowl.
  • Rub the chicken on both sides and marinade for 8 hours to 24 hours. The longer you leave it marinated, the better the flavor.
  • Take out the chicken 20 minutes prior to cooking,
  • Reheat your oven to 450 degrees Fahrenheit. Place the chicken on a sprayed rack.
  • Bake the chicken for 30 minutes and turn over for another 30 minutes until juices run clear.
  • Remove the chicken and foil tent for 10 minutes before serving.
  • Brush the chicken with any drippings from the pan.

For a more authentic restaurant taste, try grilling it on your BBQ this summer.

52 weeks of saving

Just follow the weekly/biweekly blogs to successfully save $1378 at the end of the 52 weeks.  We will start by saving $1 for the first week.  $2 for week two, then $3 for the third week and so on. Just keep increasing and continue the amount by a dollar over the next 52 weeks. The most you will ever put into your favourite piggy bank is $52 and at the end of the annual challenge you will hopefully realize how easy it is to save with just a little discipline. 

This is a great challenge for the whole family, especially when it comes to teaching children the value of money and how to spend responsibly.

I hope you will participate in this challenge.  Maybe ... donate all the savings to a worthy cause that is dear to your heart.
